Enjoying a caramel apple at the PNE in the summer was one of the only places I would treat myself to this particular dessert. Not sure what it was exactly, but the combination of sweet, crisp and almost tart apple was just perfection. I may not be offering you an alternative to a 'caramel apple' per say, but you certainly can enjoy it deconstructed as a healthy snack or dessert throughout the week. It also makes a great after school snack for kids!

Made with only 4 ingredients, my Whole 30 Date Caramel can be made in just 7 minutes! Win! Serve ideally right away or store in an airtight container for up to a week. When serving at a later date, you will just need to gently warm the caramel through and give it a stir as the caramel will separate. A minor inconvenience for a healthier alternative if you ask me! I’ve also used this caramel to top my No Bake Peach Cheesecake. It was DELISH!

SERVING 2-1/2 to 3 cups

PREP 10 mins / TOTAL TIME 10 minutes

Ingredients

~ 1 1/2 cups boiling water

~ 1 cup medjool dates

~ 1/2 tsp vanilla extract

~ pinch of sea salt

Steps 

1.In a high speed blender, place the boiling water and dates. Place the lid on the blender and allow the dates to soak for 5 minutes.

2. Before blending, add the vanilla extract and sea salt into the blender. Blend on high for 2-3 minutes until silky smooth. 

3. Best to serve immediately, however you can place in an air tight container for up to a week. When serving at a later time, warm up gently on the stove top or microwave, then serve.
