What do I mean?

I had made my Peppermint Hot Chocolate the day before along with some other dishes so that I could blitz through and get various photos accomplished. I placed everything in the fridge overnight. The next day, I went to pour out the Peppermint Hot Chocolate and it had solidified! I was a bit bummed to be honest but I tried it right out of the fridge. Silky and smooth, the perfect amount of peppermint still coming through, this was a winner. THAT, is how this Easy Chocolate Peppermint Mousse came about. Two recipes in one! Talk about a win 🙌

SERVES 2

PREP 10 mins /COOL time overnight or 6-8 hours / TOTAL TIME 8 hours 10 minutes

Ingredients

~ 1 can full fat coconut milk (400ml)

~ 100ml filtered water

~ ½ cup semi-sweet chocolate chips (I used @enjoylifefoods )

~ ½ tsp vanilla extract

~ ½ tsp – 1 tsp peppermint extract (*See Note)

~ pinch of sea salt

Steps 

1.In a small saucepan on low-medium heat, place the chocolate chips, water and coconut milk. Stir often until chocolate chips have melted.

2. Add the rest of the ingredients to the saucepan and stir until combined. Pour into desired cups or mugs and place directly into the refrigerator. Leave to cool ideally overnight, or 8-10 hours, covered. Can easily be made ahead of time and covered to preserve freshness.

Notes

If you like a milk peppermint flavour, add ½ tsp of peppermint extract. Taste. If you desire to have more peppermint flavour, add ¼ tsp at a time to ensure you reach the desired flavour profile.
