Soft Double Chocolate Cookies

If you haven't already picked this up, I love chocolate. A self proclaimed chocolate obsessed if I’m being honest. No matter what season it is, I will always default to a chocolate dessert.

These Soft Double Chocolate Cookies are chewy, decadent and oh so delicious! Perfect dessert for any chocoholic in your life. They are also gluten free, vegan and made with only 7 ingredients (most of which you will have in your pantry). Store in the freezer for a frozen dessert when a craving hits! You will NOT regret it (you’re welcome in advance!).

SERVING 12 cookies

PREP 15 mins / COOL TIME 10 mins / BAKE 15 mins / TOTAL TIME 40 minutes

Ingredients

~ ¼ cup cocoa powder

~ ½ cup coconut sugar

~ ¼ tsp sea salt

~ ½ tsp baking soda

~ ¼ cup ea. creamy peanut butter and unsweetened apple sauce

~ ¼ tsp vanilla extract

Steps 

1.Warm oven to 350 degrees Fahrenheit. Place all dry ingredients into a bowl and mix until combined.

2.Whisk the wet ingredients together in a separate bowl (or measuring cup like me if your feeling lazy!) until combined.

3. Add wet ingredients into dry ingredients and fold until combined.

4. Place bowl in the fridge for 10 minutes.

5. Remove batter from the fridge. Use two spoons to scoop 1 Tbsp of batter onto a baking sheet covered in parchment paper. Place about 2 inches apart as the cookies will spread as they bake.

6. Bake in the oven for 15 minutes.

7. Remove the baking sheet from the oven and allow the cookies to cool for 10 minutes. Then proceed to cool the cookies on a cooling rack, removing the cookies with a spatula.

*Keep in a container with the lid cracked open for 2 days if storing at room temperature. Then refrigerate (or freeze!) for up to 1-1 ½ weeks.*
